• 1 red chili pepper, chopped optional
• ~5g / 1 tbsp fresh coriander, chopped optional
• 1 clove garlic, ground optional
• 1/2” ginger, ground optional

sauce

• 75g / 5 tbsp mirin
• 30g / 2 tbsp soy sauce
• 30g / 2 tbsp black or balsamic vinegar
• 30g / 2 tbsp sesame oil
• 15g / 1 tbsp tahini optional
• 10g / 1/2 tbsp gochujang
• black pepper, to taste
• sesame seeds, for texture

1. mix thoroughly

• sauce can be made without fresh ingredients and stored in fridge
• tahini makes the sauce creamy
• fresh ingredients are very optional
• adjust everything to taste
