kc bbq sauce
ingredients
liquids+sugar
- 2 cups ketchup
- 1/2 cup yellow ballpark-style mustard
- 1/4 to 1/2 cup cider vinegar
- 1/3 cup worcestershire sauce
- 1/4 cup lemon juice
- 1/4 cup steak sauce
- 1/4 cup dark molasses
- 1/4 to 3/4 cup honey
- 2 tablespoons tamarind paste
- 1 teaspoon hot sauce
- 1 cup dark brown sugar
veg
- 3 tablespoons neutral oil
- 1 medium onion, finally chopped
- 4 medium cloves garlic, minced
spices
- 2 tablespoons american chili powder
- 1 teaspoon ground black pepper
- 2 teaspoons morton kosher salt
instructions
- mix spices and liquids+sugar in separate bowls
- add onion and oil to pan and saute on medium heat until translucent
- add garlic and saute for a minute; add dry spices and continue sauteing until fragrant (about a minute or two)
- add wet ingredients and simmer for 15 minutes
- adjust by adding anything to taste
- let cool and serve or bottle
notes
- add liquid smoke for a smokey version
- adjust vinegar to taste, but do this ahead of time to make sure it gets heated and the bite cooked off
- use a hot sauce you like
- you can use light brown sugar if that’s all you have, or substitute with molasses
- tamarind paste is optional but highly recommended
